Yes. Start a workflow with the SimplyBook.me Booking Created trigger and add Google Sheets Add New Row. Each booking made from then on is written as a row.

What happens when a client reschedules?

Booking Updated fires. Search the sheet for the booking ID with Lookup Row Data, then Update Row writes the new time and service over the old values.

Can I track cancellations without deleting rows?

Yes. Use Booking Cancelled with Lookup Row Data and Update Cell Data to set the status cell to Cancelled. Use Delete Row instead if you prefer a sheet of live bookings only.

Can each location or staff member have its own sheet?

Yes. Add a Router on the provider or location field and point each path's Add New Row at a different tab or spreadsheet.
