Use the Voxel Membership: Plan activated trigger with WordPress Change User Role or Add Role to User. Map the member's user ID and choose the role, then add a Plan Canceled workflow that removes it again.

What happens when a member switches plans?

Membership: Plan switched fires on a change. A Router on the new plan key can remove the old role and add the new one.
